I was reading u/rioreiser 's post here and did a quick debug test. Set up a simple structure and a rain collector barrel and plumbed it to a sink, then added in some river water. From my experience (single player), 5 barrels (the best ones) have always been enough to get through Winter. This includes water for crops, but I also don't overdo it on farming. 3-4 cabbage plants is all you need, supplemented with Trapping and/or Fishing.
